The Festive Recipe Bundle!

A ‘Bliss’full Christmas?

With the festive season fast approaching… I had a slightly spontaneous idea to create a festive recipe bundle including a new version of my ‘top 5 recipes’ with some new favourites I have created since the first edition.

I coupled the Christmas Recipe Guides with my favourite Bliss Ball Guide (featuring loads of recipes that haven’t appeared on the blog) because, for me, Bliss Balls are the perfect Christmas homemade gift… so many of my customers and friends will likely attest to that, ha ha!

The fun bonus with these ebooks is that they are designed such that you can print them (ideally on card), cut them along the dotted lines to keep on hand in the kitchen OR even better, use the recipe card as a gift tag when you present your homemade gift… that way your ‘giftee’ can make the recipe again for themselves. Fun, right? ;-)

All the recipes are vegan (of course) gluten free (some use oats so opt for GF versions) and refined-sugar free… so you have an indulgent Christmas without compromise.

*Note… I don’t want to imply that there should be any ‘food guilt’ I aim to inspire your creativity with food NOT make you feel bad about food! So go full out and eat sugar and refined foods if you want to, I just know many of us feel so much better in mind and body when sticking to mostly whole foods and unrefined ingredients if there is the option, and so if that’s you thing… I’ve totally got you covered!

Chocolate peanut butter fudge porridge

We are already a week into the New Year... wow that's crazy!

Are you feeling the winter blues, the back to work grind, the positive motivations struggling a little now the routine has kicked back in? Well I might have something to help put your world right and make those goals a little easier.... a rich, creamy and warming bowl of chocolate peanut butter fudge porridge.

Perfect when you only have 5 minutes to whip up a snack.

Do you remember these fridge fudges bites?

Well these form the basis of this breakfast snack bowl.  The recipe came about by total accident when I ws visiting family over the holidays. I had taken a container of my fudge bites for a sweet treat to satisfy me when others were eating regular sweets and desserts, but I had forgotten to take supplies for breakfast.  There were oats in the cupboard but i/ve never been a huge fan of porridge made with plain water- not quite creamy enough my me.

So then an idea popped into my head... make a bowl of porridge with oats, water and a couple of fudge bites. Winner!

Use boiling water and the porridge will be ready within 5 minutes, the fudge notes melt through as the last cook, and the result is a sweet and creamy bowlful. You cold of curse top with a banana for an extra boost, but I kept it simple with cacao nibs (I repeated the experiment when i got home for the photos!)

Change up the flavours of there fudge for a twist.  I made this salted PB version a while back, and also this chocolate walnut version for The Real Food Source here, and there is also an almond butter versioning their free Nut Pastes Book that I created.  

So many options!

Recipe: Chocolate peanut butter fudge porridge

Ingredients:

  • 1/2 cup regular porridge oats
  • 1 - 1/2 cup boiling water (to achieve desired consistency)
  • 2 small fudges bites (approx 2-3 tbs worth)

Method:

Add all ingredienta to a small pan and cook gently on the stove, stirring constantly to cook the oats and melt that fudge bites through the mixture. 

The porridge should be ready to serve in five minutes- I like this served super thick, but simply add extra water in the last minute of cooking if you prefer. My porridge was sweet enough as it was but you could add a fruit topping or a little sweetener of choice if needed.

Raw chocolate vanilla balls

`i have a super simple treat for you today!

Simple, sweet.... and quick to knock together in your kitchen in just 5 minutes.

It's a totally versatile recipe too and so I have purposely added lots of options in the ingredients... the main thing is that is smooshed up well in your food processor and contains the right amount of dates to make it sticky (add a teensy bit of water if you struggle to get it sticky enough!)

These could be made into a slab, sliced into squares and then dusted with cocoa but there is something fun and childlike about rolling small balls. You can just pop a couple on your mouth when sweet cravings arises, because they are dusted in cocoa they won't stick together either so are great in a little food bag to take on the road, or mix them up with nuts for a indulgent trail mix. 

These balls are chocolate vanilla but just add other extracts if you want to change them up. The cocoa creates a great bitter sweet hit as well since the coating is not sweetened but gives a hint of rich chocolatelyness (yes that is a word ok!)

You know what i'm going to say now don't you... just be experimental and get creative in the kitchen!  You can't go wrong with these little balls.

Recipe: Raw chocolate vanilla balls

Ingredients:

  • 2 cups chopped dates 
  • 1 cup chopped nuts/seeds- try ground almonds, desiccated coconut, seeds, chopped nuts
  • approx. 3tbs cup cocoa or (raw cacao for extra nutrients)
  • 1 tsp vanilla bean paste or powder (other spices or extracts such as ginger, almond or lemon would be great too)

Method:

Blend dates until soft and sticky- if your dates are very hard or you have a less powerful processor, you may need to soak and drain them first (this may also mean you need a little more dried ingredients). Add the nuts/seeds plus spice/extract blend until well mixed and sticky.

Roll into tiny balls with you hands and then dust in cocoa or are cacao. Chill in the fridge until firm.  Tis will last a png time in the fridge (multiple weeks- not that they'll last that long) or you can freeze them too and eat straight from the freezer if you like a hard chewy candy!

Who loves chocolate and coconut?

Many of my longtime readers will know that I work very closely with the Real Food Source developing recipes for (and eating a lot of!) their products.

I have written a few books for them too... with another really exciting one due very shortly.

Recipe: Chocolate Tiffin

Makes 10 squares

Ingredients:

  • 100g dried fruit mix coarsely chopped (we used dates, raisins, cranberries)
  • 100g nuts coarsely chopped (we used walnuts and almonds)
  • 20g puffed rice or puffed buckwheat (could use 50g GF biscuit crumbled like a more traditional tiffin)
  • 60g RFS coconut milk powder 30% dissolved in 50g hot water
  • 10g coconut sugar
  • 100g bar of dark RFS chocolate- split into 2 halves

Method:

Melt 50g of the dark chocolate and coconut sugar into the hot coconut milk powder mixture. Mix all the dry ingredients into the wet mix until well coated.

Pack the mixture firmly into the bottom of a small lined cake pan or loaf tin (mixture should be 1 inch thick). Melt the remaining 50g dark chocolate and spread over the top of the mixture in an even layer. Chill until very firm and then slice into squares. Tip: pour boiling water over a sharp knife before slicing to help prevent the chocolate topping cracking.

No-bake vanilla pie bites

Last week I took part in the World's biggest Coffee Morning,  this particular one was hosted by Barefoot Therapies.

There was soooo much cake of all varieties, of course I took some of my on treats along (front of photo) and they went down a storm and the kids loved them too. The bites I took was the mint choc and vanilla versions of my Wholeplus range presented in larger squares, plus some of the worlds healthiest truffles. It reminded me that i had made a batch of 'vanilla pie bites' a while back but had never got round to posting them...now is the perfect opportunity!

I've been making lots of smoosh bars in recent weeks and months, experimenting with lots of different flavour combinations. Another simple is often the best.

These mini vanilla pies are the simplest combination of ingredients and by squashing them into flattened balls instead of forming them into bars they become even more pie-like especially when dusted with a little extra coconut.

You really need to recipe but i'll give you one anyway, all you need is a decent food processor and not a particular powerful one at that. A pinch of salt will help the flavours pop but isn't necessary if you prefer to omit. 

For free to make bars or any shape you wish, you could also keep it loose and crumbly for breakfast sprinkle topping if that's more your thing, perfect sprinkled over a plain nondairy yoghurt or over a bowl of morning oatmeal. The great thing about these bites is that they are nut free and so suitable for lunch boxes too!

Recipe: No-bake vanilla pie bites

Makes approx. 20

Ingredients: 

  • 250g dates

  • 100g shredded coconut

  • 50g oatmeal or ground buckwheat (or extra coconut)

  • 2 tsp vanilla powder

  • pinch salt

Method: 

Blend dates to form a chunky paste and then add all remaining ingredients and blend until sticky enough to form 'pies' press extra coconut onto the top if desired.
