'Greens powder' FREE recipe book!

You may have seen over on my Facebook page that I've been experimenting with all things 'green' in the recipe department recently!

No it's not St Patrick's Day, it's because I've been developing recipes for Real Food Source using their Matcha powder and their Green Tea Blend.  I created another free ebook to add to their ever growing collection showcasing a collection of recipes using their green tea blend... most of these are also interchangable with pure matcha tea, so if you are a matcha fan you have loads of inspiration ready for you too!

The best thing about the green tea blend is that it combines a variety of nutritionally rich green powders at a very cost effective price.

One of my favourite recipes in the collection is this green tea 'Nice Cream'...so quick (with a little pre-freezing required) and perfect to pep you up on a summer afternoon. It's also totally ok to serve this as breakfast.... a seriously healthy treat!  Don't skip the nut butter as this creates a much creamier, richer result.

Recipe: Green Tea vegan ice Cream

Recipe: Green Tea 'Nice' Cream

Serves 2

Ingredients:

  • 2 bananas- chopped into chunks and pre-frozen 
  • 2 tsp of green tea blend (or matcha tea)
  • 2-3 tbs cashew butter
  • Mulberry crumble (or other dried fruits, granola or choc chunks) sprinkled on top to serve.

Method:

Blend all ingredients together until smooth and totally smooth and creamy, it will be very thick when you spoon it in to bowls

Add toppings of choice... something with a little chew or crunch works well. (In the photos is this mulberry crumble)

New Christmas recipe round up... including a FREE ebook!

Wow... nearly a month since I last wrote a food post! How has it been that long!

Well, I guess my mind and energy have been occupied with other things- namely my wellness retreat. It was amazingly epic, but I won't bore you here- you can hop across and find out more here and watch my videos if you fancy ;-)

Chocolate Banana Ice Cream... and another ebook!

I've been in full on design mode recently!

Making tweaks to my website.... did you see I now have two separate blog rolls AND a funky highlight's page? Of course I've also been busy gearing up for the Lanzarote Wellness Retreat!

Behind the scenes there has been even more ebook action. I have been collaborating with RealFoodSource in designing another FREE ebook... this time featuring their 'as raw as it get's' chocolate powder blend.

You can grab the book here... it has loads of inspiration and you could easily swap regular raw cacao and add your own extra sweetness. Their own raw powder blends cacao powder with coconut sugar and sea salt for an all in one ready to go option (if you are in the UK they currently have a launch promo offer).

One of my favourite recipes from the book is featured on their blog... the chocolate banana ice cream. 

Perfect for the hot summer weather, or simply a treat all year round! Frozen banana makes the perfect no churn ice cream. Use greener bananas for a less dominant taste and add a little syrup if needed as they’ll be less sweet. You can add full fat coconut milk to replace some of the banana of you wish.

Or instead of a chocolate option, why not add fruits or vanilla powder to change up flavours. I feel a rum and raisin combo coming on! Or even a citrus flavour with orange and lemon.

I shared the recipe below for a chocolate chia snake in the book and it's now on their website too. Thick and creamy shake or pudding... perfect as a summer dessert or snack. Grinding the chia seeds creates an extra super smooth and thick texture which is perfect for people who are not such a fan of the unique texture of chia in it's whole seed form.  For a pudding, simply increase the chia to 3-4 tablespoons and serve in little ramekins.

You could also dollop a little coconut cream on top, or why not try this creamy concoction plus some fruit or cacao nibs on top... so many options!

Easy Easter no-bake slices

I'm bringing you a keto inspired round up of meal and recipes in the next few days, walking you through how I went a month on a super low carb, fat fuelled diet... but for today, we are rocking the Easter thing!!

Only just over a week to go. I can't believe I haven;t brought you more before now! Ooops...

I've been busy concocting Easter recipes for Real Food Source (yes this was indeed tricky and full of crazy temptation in the midst of keto- my mum did a lot of the eating!) and so today I want to share with you these seriously simple no-bake slices.  Whilst by no means keto, these are still a great low carb treat, packed full of good fats and unrefined coconut sugar chocolate (that stuff is soooo good!) 

I love layered up desserts and you could top them within anything that takes your fancy. Here I used macadamias and a few cranberries and choc chunks.  Chill the slices well and cut with a sharp knife for a super neat edge.  These freeze well too if you don' t trust yourself enough to keep them on the kitchen counter! :-)

Inca berry cocoa bites!

I've been testing lots of ingredients for Real Food Source recently... they are expanding their products lines and it means I have even more reason for kitchen playtime... yay!

A new addition to their range are Inca Berries (aka golden berries). I hadn't actually tried them before, but I love them. They have a totally unique sweet and tangy flavour (similar to the Haribo Tangfastics of my childhood!) they make my face wrinkle a little and then I go back for more because they are moreish like that. You don't need many to get your sweet kick. 

These berries suit both sweet and savoury recipes, I also made a kale salad in which the inca berries offered a delicious tangy topping. 

Inca Berries have many different names in different countries... and in France they are known as 'Amour En Cage' (Love in a Cage) well I thought that was perfect for upcoming Valentines Day... though I guess its debatable how romantic a cage is (ok, lets not go there!)

I played around with a simple little no-bake recipe to get started with. Little cocoa bites... I made a version with pure cocoa butter and vanilla powder as a mild creamy base and a way to hold the berries together, then I went on to melt some dark chocolate into the bottom of mini muffin cups and topping with chopped macadamias and inca berries. That was my favourite if you hadn't guessed!

The FREE healthy Christmas recipe ebook!

It's December....so now it's legitimately full on Christmas mode...YES!! 

Who's put their tree up already?

Who's been busy in the kitchen making Christmas themed treats? ...ME! (since August- ha ha!)

Last year I wrote a Christmas recipe ebook in conjunction with The Real Food Source, well this year it's back, bigger and better with a selection of new treats to try out. There is a combination, of new and old plus recipes from their kitchen and some from my archives.

A new recipe for me is my almond pastry mince pies with homemade mincemeat infused with goji berries... it's just so moreish!
