It also combines, a weekly email programme structure, a small group interactive option as well as 1-1 sessions direct with me and a 'future proofing' strategy to carry forward into your everyday lives. 

'Sugar' an area of nutrition I am so passionate about and I am so excited to be able to bring it to you. I am finalising the details as I speak and will update you on all the info soon. Hot quinoa salad

I'm making the best of the last few weeks of summer, it seems to have got decidedly cooler and more autumnal recently, but today the sun has come back out which makes me happy!

I thought it would be great to do a post about some of the ingredients they are offering in the bundle, lots of beautiful organic spices in cute glass jars. I just loooove these glass jars and would love them even more lined on a shelf in my kitchen! Alas, my kitchen is not so neat and tidy and so mine are stacked up in a box in the pantry cupboard :-)

 

First up.... Hot quinoa salad.

I use quinoa so often in all manor of recipes both sweet and savoury. It's my go to choice since it's both gluten free and protein rich, but also has great texture and a mild flavour. My favourite options are quinoa cookies and quinoa porridge but sometimes it's nice to keep it simple and let the natural slightly nutty flavour do the talking. I created this recipe for The Real Food Source too since they have added organic tricolour quinoa to their range (cue much excitement from me!) The colour and the subtleties of favours are beautiful.

This was a simple meal and I whipped it up one lunchtime a few weeks back in the peak of summer. A quinoa salad is a perfect light meal, great for lunches. I have provided a quick recipe below using Steenbergs Organic Panch Porah (once of the spices in the bundle), This is a blend of organic brown mustard , organic nigella , organic cumin seeds , organic fenugreek and organic fennel coming together in a unique mix of diverse flavours. I loved the varieties of seeds and the fact that it wasn't simple a ground up spice mix.

You could really you can use any blend of your favourite herbs or spices, dressing, salad leaves and other veggies as you see fit...it's a very versatile salad! For example roasted cherry tomatoes, white beans and lightly steamed chopped broccoli florets would have worked equally well. This is simply one of many quinoa salad combos i've made. 

I've used their ingredients in many of my recipes in the past...

There is also a jar or organic turmeric in the bundle. Perfect for these 'recovery burgers' so called due to turmeric poweful anti-inflammatory properties. 

Or if you want something a little sweeter... try using the Organic orange extract (with oil instead of alcohol) to make one of my favourite sweet treats- choc orange goji bites!


Recipe: Hot quinoa summer salad

Serves 2

Ingredients: 

  • 1 cup cooked quinoa (1/2 cup uncooked)
  • 1 small courgette- sliced into half moons
  • 1 small leek- sliced finely
  • 1/2 cup frozen peas
  • 2 large handfuls watercress (spinach or a rocket mix would also be great)
  • 2 tsp tahini or other nut butter
  • 1 tsp lemon juice
  • 1 tsp mixed herbs

Method:

Cook the quinoa. 

Meanwhile saute the leek and courgette for 5 minutes then add the nut paste, lemon juice and herbs with a splash of water to create a very light sauce for the veggies. Continue to cook for a further few minutes whilst also cooking the peas in a separate pan.

3 ingredient choc-oat bars... and another Giveaway!

Remember I said I was teaming up with companies who's products I love... well it's now time for another giveaway!  This time with Rude Health who make lot's of oaty based goodness... which is heaven for a porridge addict like me!!

Last week on the blog you had the oat bake... which seemed to be pretty popular! Today I'm bringing you a super simple three ingredient chocolate snack bar! You can of course use Rude Health oats or oatmeal for the recipe... or any oats you have to hand.

Recipe: Chocolate oat bars

Makes approx. 10 bars

Ingredients

  • 2 packed cups chopped dates*
  • 1 cup ground oats (grind regular oats or use oatmeal)
  • ¼ cup cocoa
  • Optional- 1 tsp cinnamon, vanilla, mint or orange extracts all taste great

Method

Process ingredients together until sticky. Press into the bottom of a lined small pan or loaf tin.

Chill until firm and slice into bars. Can be frozen.

*I used deglet noor dates but you may find medjool dates are softer and easier to blend if you don't have such a high powered processor.

Salted peanut butter fudge! (and chocolate giveaway reminder!)

If you are a peanut butter addict then you'll love this fudge! The smoothest, creamiest, treaty-ist form of peanut butter you'll find!

I drizzled my fudge with dark chocolate for extra decadence. Of course I used my Real Food Source chocolate which is the best chocolate I've ever found for melting down in recipes (or just eating on its own!) 

...Oh, and what a good way to bring in a little reminder about my giveaway. Oh so subtle! :-)

Recipe: Salted peanut butter fudge

Recipe adapted from I Quit Sugar

Approx. 24 squares

Ingredients

  • 2 tbs coconut oil- melted
  • 2 tbs syrup of choice*
  • 2-3 drops stevia to taste (optional)
  • 1 tsp vanilla extract
  • 2 tbs coconut cream (I used the thick part of the top of a can of coconut milk)
  • ½ a jar of smooth unsalted peanut butter (175g)
  • A sprinkle of sea salt- for topping
  • Dark chocolate- for topping

Method

Melt the coconut oil, syrup, vanilla and stevia together in a pan over low heat. Add the remaining ingredients and mix well until softened and completely blended. Do not allow the mixture to boil.

Pour/spoon the fudge into a lined loaf tin (mine was approx 9x3” in size) smooth the top level and then add ridges with a fork. Sprinkle with the sea salt.

Freeze the fudge for 1-2 hours until set. Slice and drizzle with dark chocolate if desired.  Store in the fridge to prevent softening.

 *I used yacon syrup as it’s a nice thick syrup but brown rice syrup or coconut syrup would also work well. If omitting the stevia you’ll need to add 2tbs extra syrup.

Chocolate recipes....and a CHOCOLATE GIVEAWAY!

But not just any chocolate.... the really good stuff!

As you know I work very closely with the Real Food Source in developing recipes for them and creating ebook's with them. Our relationship was founded back in early 2012 when we were both young companies with a shared ethos of 'real food'. I bought their products back then and still do to this day. The Real Food Source is a company I fully support and would have no hesitation to recommend to others.

So, let's cut to the chase.... chocolate!

I'm so excited to be able to share this with you...

I am hosting a special one-off giveaway!

But as a quick overview, this chocolate is pure organic 72% dark chocolate made from just 3 simple ingredients:  Organic cocoa liquor, organic cocoa butter and organic unrefined cane sugar.... and absolutely nothing else!

These chocolate bars are great for simply savouring as they are but due to the high cocoa butter content this chocolate is actually a 'couverture' (high cocoa butter content chocolate). This results in a smoother, creamier and more refined experience compared to low cocoa butter content chocolate... this chocolate makes for the perfect baking chocolate with it's ability to be melted and tempered with ease. I LOVE IT!

Here are a few recipes I've made for them with this chocolate in the past (along with many of their other ingredients) none of these recipes require any cooking... just a little melting!

Chocolate crackles... simple melt the chocolate (and use instead of cacao liquid and stevia)

Chocolate tiffin fridge slice... one of my all time favourites!

Crunchy melts... the crazy simply way to crunchy chocolate bites!

Chocolate coated truffle balls.... I posted a variation of these on my blog, my go-to treat of the moment! (I have so many requests for these at the moment!!) you could drizzle of go for the full dip coating!

Just to treat you, I have posted the truffle ball recipe here... this was the almond version that I made for Real Food Source. The links are the ingredients I used from Real Food Source, but you can easily use you own nut butters and syrups.

Recipe: Nutty choc truffle balls

Ingredients

Method:

Soak the dates in hot water for 5 mins and then drain. In a food processor, mix all the truffle ingredients together to form a thick paste, it should be sticky but not too sticky to handle.

Using your hands, roll into walnut sized balls and chill until they are a little firmer.

Melt the chocolate and using a toothpick dip the firm truffles into the chocolate to coat fully,  or just hold with fingers and dip half the truffle and add a drizzle to the top once laid out on a plate or parchment to set.

These don’t need to be refrigerated and will be a little softer at room temperature. Eat within 3 days.

Matcha avocado crackers

Have you entered my teapigs give way yet!

This was one of my favourite matcha recipes, it was so simple and a great way to pep up an already health boosting snack. I had these avocado crackers with salad and it made the perfect  lunch to keep me going all afternoon. You could serve the avocado spread in any way you'd typically eat it... maybe slather it on a jacket potato or serve up in a  wrap!

For the crackers themselves I used homemade dehydrated quinoa crackers (recipe still needs a little tweaking before I post it) but you could also use rice cakes or oat cakes. For some other cracker ideas try these spelt crackersor these easy seedy crackers.

 Recipe: Matcha avocado crackers

Serves 2

  • 1 large avocado
  • 1 tsp (2 servings) of matcha powder
  • 2 tbs squeeze lemon juice
  • salt and pepper to taste
  • crackers to spread the avocado mix on

Method:

Mash/mix everything together well and spread on top of the crackers.

Serve with a salad or whatever you fancy.

Eat immediately!
