Celeriac chips... half the carbs of potato chips!

I've been experimenting a lot with a low carb lifestyle recently, as well as going grain-free for November. It has actually been surprisingly easy, although I do miss my oat fix at times (if you've been reading a while you will know I looove my oats!) Buy hey there are other ways to get a porridge fix... an amazing recipe will be coming at you next week- watch out for it!

So, I guess I do naturally follow a fairly low carb diet in any case since I minimise my wheat intake and get most of my carbs from pulses, but it's always good to be more aware of your everyday choices and make mindful decisions that best suit your body and your lifestyle. Particularly when those decisions mean you never feel deprived of your favourite things....win win!

Celeriac chips may be a game changer for me!  They taste awesome and look like proper chips, yet have around half the carb content of regular potatoes. I also just like the fun factor of making chips out of other types of veggies- ha!

I've seen celeriac chips popping up around the internet for years but for some reason had never attempted to make my own. To be honest I've never really cooked much with celeriac before, if you're a bit like me in that respect, then I tell you this simple recipe may change your life. Ok, maybe it is a tad dramatic, but you get the idea.

You can serve these chips as a snack or light meal or as part of a main dish. I had mine as a light lunch with a big side of home-made sauerkraut but I also tried tried them dipped in mustard which was a nice flavour compliment.

Another first for me was using asafoetida spice, not really sure why but it just took my fancy. Garlic salt or an Italian mixed herb combo would have be my second choices... but just go with what your taste buds call for!  

I found these chips to be softer than regular potato, more in line with how my sweet potato fries tun out, therefore I decided to use a mesh oven tray that helps air circulate and prevent soggy bottoms. You may have your own tried and tested way to get crispy chips, if so please let me know in the comments!

Now tell me, what are your favourite 'non-potato' chips/fries to make... there are so many options out there! Everyone loves chips, right?

Recipe: Celeriac chips

Ingredients:

  • ½ large celeriac (approx 2 cups sliced)
  • 1 tbs coconut oil
  • 2 tsp spices of choice (I used asafoetida)
  • ½ tsp salt

Method:

Peel and slice the celeriac into chunky chip sized pieces. Bring a the saucepan of water to the boil and simmer the celeriac for 2 to 3 minutes. Drain and pat dry.

Toss the parboiled celeriac with melted coconut oil and the spices. Lay evenly on a lined non-stick oven tray and bake for 30 to 40 Minutes until golden. I used a mesh oven tray to help increase air circulation and maximise crispness.

Note: I serve mine with homemade sauerkraut, but mustard, ketchup or chutney would be good!
